High-fiber anti-oxidant rich food is the best choice when your stomach needs a little soothing. This spinach soup is a perfect remedy to set your digestion right & make you feel better.
- 1 tsp olive oil
- 1 clove garlic, crushed
- 1⁄2 medium onion, finely chopped
- 1 small white potato, peeled and cubed
- 1 cup water
- 1 cup skimmed milk
- 100g spinach
- Freshly ground black pepper and salt to taste
Heat oil in a large saucepan. Sauté garlic, onion and potato for 5 minutes in olive oil. Add water and milk. Bring to a boil, cover and simmer for 10 minutes. Stir in three- fourths spinach, cover and simmer for 10 more minutes.
Cool slightly, then transfer the soup to a blender and blend thoroughly. Add remaining raw spinach and blend. Blend until smooth. Add salt and pepper to taste and warm it up before serving. Enjoy the soup with crusty whole grain bread.
